Once you mark the order as prepared, the button disappears, and any change can only be made by talking to you. That way you don't prepare an order for nothing that the customer no longer wants.

What if more orders come in on Sunday than I can prepare by Monday morning?+

You set how many collection orders you can prepare by the chosen time. Once that many have come in, the next customers see Tuesday, not Monday, as the collection date, right in the basket, before they pay. You don't promise what you can't manage, and the customer decides for themselves whether that suits them or chooses delivery instead.

Lots of customers ask me to gift-wrap things and add a card. Can they request that straight from the basket?+

Yes, as an option ticked at the end of the order, with the wrapping price shown next to it if you charge for it, and a short field for what should go on the card.
